Turkey burgers

400g minced turkey

1 apple

1 egg

100g feta cheese

flour

onion powder 1 tsp

garlic powder 1 tsp

Method:

In a large bowl, mix together the turkey mince, onion, garlic, cheese, and egg with a little salt and pepper. Combine well with your hands, then shape into 4 flat burger patties. Heat the oil in a frying pan over a high heat, then cook the burgers for 5 mins each side or until cooked through. Serve with sweet potato fries and salad.

Italian Pasta Carbonara

Ingredients:

100g spagetti

5 portobello mushrooms chopped

1 red onion diced finely

1 clove garlic mined

1 tsp parsley (dried) or handful fresh parsley

3 egg yolks

60g parmesan cheese

salt and pepper

1 tsp oil

Optional: leftover cooked chicken/ham

Method:

  1. mix eggs and parmesan in separate bowl 2. Cook pasta in boiling water. 3. Saute garlic in oil, add onion and cook until browning. 4. Add 1 tbsp of pasta water to mushroom pan and reduce heat and cover. 5. When pasta is cooked, drain and set aside. 6. Add egg mixture to pasta and mix until glossy, keep stirring to avoid egg scrambling 7. Serve pasta with mushrooms on top. Stir in parsley. 8.Add in diced cooked meat if you like!

Apple pecan bars

Ingredients:

100g Oats

1 apple peeled and grated

50g pecan chopped

2 bananas mashed

1 tsp cinnamon

1/3 tsp vanilla extract

Method

  1. spray small baking dish with oil and lined with parchment paper 2. mix ingredients together 3. Bake at 200degrees for 30minutes until edges start to crisp.
