Chunky guacamole

Ingredients:

1 avocado

1 red onion sliced

lime juice from 1 lime

80g tomatoes sliced

Worcestershire sauce

Onion powder 1/3 tsp

Garlic powder 1/3 tsp

worcestshire sauce 1 tsp

1/2 tsp dried cilantro

Optional: mango, peppers, corn, sliced peaches

Method: mix together. Keeps for 1-2 days.

Veggie Quesadilla

Ingredients:

1 wrap

2 peppers sliced

1/2 red onion diced

cumin 1/2 tsp

paprika 1/3 tsp

onion powder 1/3 tsp

garlic powder 1/3 tsp

1/2 avocado

lime

worcestershire sauce 1 tsp

1 tsp olive oil

1/3 can black beans drained (60g weight cooked beans)

Method:

1. Saute pepper, 1/2 the onions in small pan oil and seasonings for five minutes 2. Add beans and heat covered for 5-10minutes 3. heat wrap on larger pan and spray lightly with oil 4. meanwhile mash avocado and onion with lime and Worcestershire sauce 5. add bean/veggie mixture to wrap, sprinkle with cheese and fold over. 6. heat on low heat for further few minutes until slightly browned 7. serve with dollar of avocado mixture.

Overnight Oats

Overnight-oats-raspberry

Ingredients:

40g Oats (about 2 big tablespoons)

200mls milk

1 tablespoons chia seeds

1 scoop whey

1 handful strawberries

Method:

Stir and leave overnight. Eat cold or hot next day
