Veggie Quesadilla


1 wrap

2 peppers sliced

1/2 red onion diced

cumin 1/2 tsp

paprika 1/3 tsp

onion powder 1/3 tsp

garlic powder 1/3 tsp

1/2 avocado


worcestershire sauce 1 tsp

1 tsp olive oil

1/3 can black beans drained (60g weight cooked beans)


1. Saute pepper, 1/2 the onions in small pan oil and seasonings for five minutes 2. Add beans and heat covered for 5-10minutes 3. heat wrap on larger pan and spray lightly with oil 4. meanwhile mash avocado and onion with lime and Worcestershire sauce 5. add bean/veggie mixture to wrap, sprinkle with cheese and fold over. 6. heat on low heat for further few minutes until slightly browned 7. serve with dollar of avocado mixture.
