Fish pie

We really all should be aiming to eat fish twice per week. I know white fish is boring adding some mashed potato and cheese helps it go down a little easier!

  • 1kilogram of potato (peeled and sliced)
  • 40g butter unsalted 
  • 1 carrot (peeled and grated)
  • 1 stick celery (grated)
  • 50g flour 
  • 2 bay leaves
  • 200mls fish stock
  • 100mls milk (low fat)
  • 100g cheddar grated 
  • 1 tablespoon mustard
  • 600g fish (mixed-salmon, white fish, shrimp etc)
  • lemon 
  • parsley

1. Preheat oven to 200degrees 2. boil potatoes for 10-15minutes 3. Whilst potatoes are boiling, add grated carrot, celery and chedder to casserole dish 4. Start making the sauce (Melt butter in pan and stir in flour on low heat. Add bay leaves. Add stock and milk slowly spoon by spoon. Stir until you get a white creamy sauce. Bring to boil and reduce on med-low heat for 10minutes. 5. grate lemon zest to mixture and add parsley 6. Add bitesized portion of fish to tray 7. Squeeze juice of lemon into tray. 8. Take potatoes of stove and mash with mustard and butter/olive oil and salt and pepper as needed.9. Add sauce into dish (remove bay leaf) and top with mashed potatoes 10. Bake for 40minutes or until topping starts to go crispy 11. Top with extra cheese if needed.
