Veggie side dish

- Bag of spinach

- 5 large tomatoes sliced

- 2 tablespoons low fat philadelphia

- 2 teaspoons dried basil

- 10 olives sliced

- pepper

- teaspoon olive oil

- water

1. Heat oil in pan 2. Add tomatoes and reduce heat to med-high 3. Add in cheese and herbs and stir until tomatoes becomes mushy 4. Add in spinach and reduce heat and cover 5. Wait until spinach is wilted 6. Add water to Philadelphia 'sauce" if needed to loosen 7. add olives for 1 minute to heat 8. serve with chicken/fish or as a quick salad with a fried egg on top.
