Shredded potato with eggs

Sunday breakfast

- 1 large russet potatoes (peeled and grated)

- 1/2 onion (chopped finely)

- 2 eggs 

- vegetable sides (mushrooms and chopped spinach)

- Olive oil 2 tablespoons

- 2 tablespoons flour

1. Place shredded potato in paper towel and squeeze to remove water 2. Mix onion and potato together and add flour and 1 egg 3. Turn on pan to high heat and add oil 4. Form potatoes and onion into pancake shapes in the pain 5. Fry for 4-5 minutes and flip 6. Reduce heat and cover for 5-10minutes until potatoes cooked through/appear brown 7. Top with fried egg and side of sautéed vegetables.
