Fresh Tomato and Basil Pasta

Tomato and basil pasta dish

Tomato and basil pasta (serves 1)

- 60g pasta dried (wholewheat)

- 80g chopped tomatoes (the more colour the better)

- 40g mozzarella balls/slice mozzarella

- 50g spinach 

- basil

- salt and pepper

1. Boil pasta as per usual 2. Chop tomatoes, basil and cheese, 3. Saute spinach in pan for 2-3 minutes until wilted 4. Add ingredients together whilst pasta still warm. 5. Top with plenty of pepper. 6. Perfect to eat cold/hot.
